Upsaaru

Unlike most recipe blogs these days I won't describe my childhood before I give you this recipe :P

Upsaaru has three parts

  • Khaara (spice)
  • Palya (curry)
  • Saaru (soup)

Khaara

Ingredients
  • Jeera
  • Red Chillies
  • Tamarind
  • Garlic
  • Pepper
  • Salt
  • Dry coconut (optional)

Dry roast the red chillies and grind them with the rest of the ingredients, and some water into the consistency of a chutney. It should look something like this

Saaru and Palya

Ingredients
  • Khaara (spice/chutney)
  • Onions chopped
  • Beans chopped
  • Dill leaves
  • Green chillies
  • Mustard seeds
  • Fresh grated coconut
  • Oil

Pressure cook the beans and dill leaves with a good lot of water. Separate the water and the veggies. Don't throw away the water. Put some oil in a pan. Once it's hot, add the mustard seeds and wait for them to splutter. Add the green chillies and fry for a few seconds. Add the onions and wait till they turn transparent. Throw in some salt. Add the beans and dill leaves. Cook for a few minutes. Now that's the Palya.

Get the water you separated to boil. Add the Khaara to it and some salt to taste. Heat a little more oil in a small vessel. Add mustard seeds and allow them to crackle. Throw that into the Saaru.

Perform a pirouette. Take a bow.

Serve with steamed rice or Ragi Mudde.

The chutney tastes really good with Akki Rotti and Ragi Rotti as well.
